Prices and seasonal pies change with what's good. This is our living menu; the kitchen closes 30 minutes before we do.

Start with the dough

Here's the whole secret, and it isn't a secret: we let the dough wait so you don't have to.

Caputo "Pizzeria" 00 flour, 62-65% hydration, leavened with a sourdough starter we've kept since day one, bulk-fermented and cold-retarded 24-48 hours. The Neapolitan pies bake 60-90 seconds in a Stefano Ferrara wood oven at 430-485°C, soft, airy, leopard-spotted. The pan pies ("Federal Hill Square") go higher-hydration into seasoned blue-steel in our deck oven for a crisp, frico-edged, focaccia crumb. Two doughs, one obsession.

Drink with it

A great pizza wine costs $14 a glass and disappears before the pie's gone. Lambrusco with a red pie, Etna Bianco with a white, never wrong, both by the glass. Ask Dana's team; they live for this.
